Comparison to Similar Japanese Sushi Knife Set

To begin with, this knife save me hours of drudgery every week preparing sushi. Additionally, I’d recommend getting Japanese water stones to sharpen them with. Furthermore, it’s a great looking piece. Above all it’s as beautiful as it is functional.

Even if in the past you had use knives from Cutco to the generic American-made knife that you hand-sharpend. The yoshihiro sushi knife keeps its edge so well. And it sharpens quickly for such a hard-steel knife (single bevel is nice) and it feels great in the hand.

Similarly the knife has a nice weight in the hand and gives a very balanced feel. Not heavy but not flimsy feeling neither. Blade slices cleanly and thinly. I can attest to the quality as well. There were no problems with the blade even with a few accidental drops.

As advertised it’s sharper than any knife you will ever own. Cutting through carrots makes the newly cut edge of the carrot appear to have a “smooth as glass” texture. Other knives ‘chop’ through things like an axe breaking through the surface. Meanwhile, this knife almost whispers through vegetables, chicken, fruit.

Consider the well finished and fit wood handle with a “western style”. This gyuto is a fully functional work of art. Absolutely beautiful and built with great craftsmanship. Besides being a great caring tool, it’s also easy to keep clean, easy to use.

The Yoshihiro Sushi Knife is a good sushi knife that can cut through anything effortlessly.

Description

The length and balance are great for all around use-chopping, slicing, even fine work using the tip. The finish of the handle and blade are perfect. There are no raised imperfections along the tang or rivets. The wood handle feels solid and is easy to hold makes it easy to confidently work with. I was concerned about the Damascus feature because cheap acid etching “damascus” is very common but is too obviously fake.

This damascus is the real deal and you can tell right away. The pairing knife looks perfect next to this chefs knife as well. There are problems that usually comes from the finish done to the blade. If not from the same set you would be aware of some differences in their quality. But, side by side, you would never know any difference between the knives.

The Japanese are an ancient culture that has always prided itself on its craftsmanship. This company is one of those that have continued the ancient ways. This company puts out the yoshihiro sushi knife that is second to none. This knife is more than just an implement to the one who created it.

It is his inner being and all that he believes put forth through his hands upon this beautiful implement. Characteristics of Yoshihiro Sushi Knife

QUALITY, FIT-&-FINISH: While this yoshihiro sushi knife’s price is only at around $125-$135. The build quality is what I would expect to see in a knife costing $250+. I do not own any knife priced at $130 that is as comparable to that of the yoshihiro sushi knife.

STEEL: This professional sushi knife is hone from heat treatment fortifying a great steel type. Hence when the heat treatment is poor, it tends to chip like crazy. However, this company does a darned fine job from their heat treatment creating knives that can slice aggressively.

Additionally, the yoshihiro sushi knife hold an excellent edge. Meanwhile also sporting excellent toughness for this type of blade. As a result, the blades does a great job at resisting corrosion, and still be easy to sharpen. While there are tons of VG-10 knives on the market, very few perform this well.

EDGE GEOMETRY & CUTTING PERFORMANCE: the fantastic geometric design of the blade has the real-world benefit. It needs less physical force than is need to achieve the same results. This excellent edge geometry also improves edge-holding and makes sharpening easier.

THE HANDLE : Made from well-done mahogany wood. Besides the design of the wood, it also compliments the hammered blade nicely. Additionally, it feels very balanced and nimble in the hand. For the most part, it is comfortable to use with both more Eastern and more Western style grips. However, the “pinch grip” is more preferable for doing a lot of repetitive cutting. So when using this professional sushi knife it was very comfortable and easy to settle into a consistent rocking motion.

DURABILITY: First of all the method which the handles mate to the blade and the hammered finish means this Japanese sushi knife will hold up for decades. And the Mahogany wood itself is a durable hardwood capable of standing up to usage and resisting cosmetic damage. THE LOOKS — the Japanese sushi knife is very classy and stylish. For a Damascus knife, this sushi knife manages to maintain a lower-profile look. So this sushi knife is not gaudy. The damascus and wood compliment each other in a way that is just pleasing to eyes. People always ask about this professional sushi knife when they see it in the case. And frankly, pictures do not do this knife justice.

7" is a bit shorter than most chef’s knives. But if you have smaller hands. Particularly a somewhat more constrained prep environment in your kitchen, then this size is ideal for you. Usually you will only notice the shorter length if using to carve or cut very large vegetables.
